Watermelon Lemonade

Want something to satisfy your sweet tooth without the sugar crash? Try this fresh watermelon lemonade. This recipe uses just three simple ingredients: watermelon, lemon, and mint leaves. Since this lemonade is made using a blender, the watermelon fibers are a part of the beverage. So you get all the sweetness from the fresh watermelon along with the natural fiber, which will help digestion and regularity. Not to mention, watermelon is a low-glycemic fruit to begin with, which means it is sweet to the taste without spiking blood sugar. There is another powerful ingredient in this delicious summer drink - the lemon! Lemons contains vitamin C, which supports a strong immune system and wrinkle-resistant skin. Give this new-and-improved summer lemonade a try to boost health and sip on something refreshingly sweet!

Watermelon Lemonade

Serves 2 / /Total Time: 5 min
Ingredients
4 cups watermelon, cubed* 1 tbs. fresh squeezed lemon juice (more to taste) 6 mint leaves
Instructions
Put watermelon and lemon juice in blender. Blend on medium speed until watermelon is completely broken down into a thin slush. Taste, and if it's too sweet, add more lemon juice 1 teaspoon at a time. To serve, gently muddle 3 mint leaves in the bottom of two glasses, then pour watermelon lemonade over it.
Notes
If you're going to serve right away, ideally the watermelon would be pre-chilled in the refrigerator. If not, you can muddle mint, then add ice before pouring watermelon lemonade in glass, or make the watermelon lemonade, and refrigerate for at least 1 hour before pouring into the glass. You could blend the mint into the drink, ( it will taste even more amazing!) but it will turn your drink rusty brown instead of bright pink!*
