Rawtella Stuffed Pancakes

By Gillian B If there is one thing that most of us remember from our childhood, it is Nutella! While it sure did taste great, it turns out that Nutella was not all that good for us. Lucky for all the kids at heart, there is a healthy alternative called Rawtella that tastes INCREDIBLE! It has all the goodness of raw hazelnuts without the other weird ingredients. nut-65292_1280 These pancakes are so next level. Definitely a sweet treat, so next time you are looking to impress your Honey or kids, make these! Rawtella Stuffed Pancakes 20337096608_8e49b77804_bFlickr Serves 2 Ingredients: 3/4 cup wheat-free oat flour 1 flax/ chia egg or pasture raised egg 8 tbsp Rawtella 1 tbsp coconut oil or ghee for cooking 1/2 cup almond milk 1 tbsp maple syrup 1 tbsp raw almond butter 1 tsp baking powder 1/2 tsp baking soda 1/2 tsp pure vanilla extract pinch of sea salt Preparation: Frozen Rawtella Disks: 1) Line a baking tray with parchment paper. 2) Dollop 1½ to 2 tbsp of Rawtella onto the baking tray and spread into a disc around 2½" / 6cm in diameter and ⅕" / ½ cm thick. 3) Place the tray in the freezer until firm (around 1 to 1½ hours). 4) Peel off the parchment paper. Keep the Rawtella discs in the freezer until required (they soften quickly). Pancakes: 1) Preheat an electric griddle or frying pan with some of coconut oil to medium heat. Once melted, wipe most of the butter off with a paper towel. You want just enough oil in the pan so they will not stick. 2) If you are vegan, mix flax/chia seeds + water in a separate bowl and allow to soak. If not vegan, use a pasture-raised egg. 3) In a large mixing bowl combine all wet ingredients. 4) Slowly pour wet into dry and whisk until all the clumps are gone. 5) Take 3 Frozen Rawtella Discs out of the freezer just before you start cooking. 6) Dollop ¼ cup of batter into the frying pan. Working quickly, place 1 Frozen Rawtella Disc in the middle of the batter and top with batter to cover the filling. 7) When bubbles start appearing around the edges (around 2 minutes), lift up the edge and make sure the underside is golden. Then flip and cook until the other side is golden. 8) Repeat with remaining batter and add more oil after the 2nd pancake. 9) Serve warm with berries!   1. Don't make the Rawtella discs too thin otherwise they may break when you handle them. However, on the other hand, don't be too greedy and make them too big otherwise they will ooze out everywhere when you are making the pancake!
  2. Wiping most of the oil off is the secret to getting the first pancake an even golden brown rather than splotchy which is what usually happens.
  3. If you get a pancake that "bursts" and Rawtella spills onto the frying pan, scrape the Rawtella off before making the next one. Otherwise, you'll get burnt bits of Rawtella on your next pancake!
  4. The Rawtella discs soften quickly. They need to stay firm to handle them.
