This product consists of ground whole cacao beans that are processed at low temperatures into our cacao paste with no other additives. In essence, this product is 100% cacao chocolate. No sugar. The Ten Major Species of Cacao

      • Criollo (This refers to ONLY Central American cacaos of which we grow many at our farm in Hawaii. Those claiming their product is from Ecuador, but of a criollo variety, do not understand cacao genetics and are misinformed; their product should not be trusted).
      • Upper Amazonian Forastero (A solid mix of genetics producing the best tasting cacao in the world. Arriba Nacional is the original cacao of Ecuador which has mixed with Upper Amazonian genetics. These together are the genetic source of our Cacao products.)
      • Trinitario (A mix of numerous cacao genetic groups that were made popular on the island of Trinidad.)

Of these, Upper Amazonian Foresteros with Arriba Nacional genetics are often the most highly prized for their flavour and mineral content and the tree’s overall beauty.
