Baked Heirloom Carrot FriesPrep: 5 mins Cook: 30 mins Total Time: 35 mins
Ingredients:1 bunch of colorful heirloom carrots (or regular) 1-2 tbs. olive oil salt TOPPINGS (optional): Herb oil 1 tbs. olive oil 1-2 tbs. minced fresh parsley (can substitute cilantro) Crushed walnuts
Instructions:Preheat oven to 400 degrees. Cut the stems off the carrots, leaving about 1 inch of green on top. Slice each carrot into two equal halves, lengthwise. Brush with oil and lay out on a baking sheet. Sprinkle lightly with salt. Bake for appx. 25-30 minutes. (more for thicker carrots, less for thinner ones). Optional: Meanwhile, in a small bowl, mix fresh parsley and oil. When carrots are finished baking, put them on a serving dish in a straight line, and drizzle one line of herb oil across the middle, and sprinkle with crushed walnuts. Serve.
