Crispy Curry Chickpeas: Nutritious and Delicious!

These little treats are so good, you can even buy a packaged version now. But of course, making your own crispy curry chickpeas will be even more delicious. On top of that, crispy curry chickpeas can double as both a snack and as “croutons” on top of your favorite salad. They’re made with a fragrant blend of spices and have the perfect crunch.

Chickpeas: Chickpeas are particularly beneficial for digestive health because they consist of up to 75% insoluble fiber. They’re also a top source of antioxidants. Turmeric: Turmeric is a powerful spice that has been shown to exhibit anti-inflammatory, antiviral, antibacterial, antifungal, and anticancer activity. Cumin: Cumin contains powerful antioxidants, promotes healthy digestion, and has anticarcinogenic properties. Crispy Curry Chickpeas

Prep Time: 5 minutes Cook Time: 50 minutes Total: 55 minutes
Ingredients:
2 cans chickpeas, drained and dried with paper towel 2 tsp. avocado oil or virgin olive oil 1 ½ tsp. curry powder (I used Simply Organic) ½ tsp. of each of the following:
  • garlic powder
  • turmeric
  • cumin
  • paprika
  • pink or Celtic salt
  • black pepper
¼-½ tsp. cayenne (depending if you want mild or medium)
Instructions:
Preheat oven to 350 degrees Fahrenheit. Line a large baking sheet with parchment paper. Pour the chickpeas on top and spread them flat. Add the oil and spices, and use your hands to mix and roll all the chickpeas around, so they are evenly coated. Make sure the chickpeas are flat in a single layer before putting into the oven. After about 25 minutes, carefully shake the pan or use tongs to move the chickpeas around, and then continue cooking for another 25 minutes, until crisp. Enjoy these "treats" as a snack or like croutons on top of a salad.
